1 kg of fresh yeast is produced from 1,600 gr of liquid yeast.

1 kg of instant dry yeast is produced from 3 kg of fresh yeast.

 

What is the difference between dry yeast and instant yeast?

The granule diameters of instant yeast are smaller than dry yeast and emulsifier is mixed into it while producing the instant yeast, which allows it to disperse in the dough. Therefore you can use instant dry yeast directly without soaking it in water.

Before using dry yeast, you need to wait for it to become active by soaking it in water.
